GROUND BEEF AND NOODLES IN LEMON SAUCE

1 cup fine egg noodles
2 tablespoons butter or margarine
3/4 cup onions, diced
1-1/2 pound leanest ground beef
1 pound mushrooms, sliced
3/4 cup water
2 egg yolks
3 tablespoons fresh lemon juice
2 tablespoons sherry

Put the noodles into a heat-resistant mixing bowl and cover them with boiling water. Set aside for 20 minutes, then drain.

In a frying pan, melt the butter, add the onions, and sauté five minutes or so. Add the beef, mushrooms, and noodles. Increase the heat to high and cook for another five minutes, stirring constantly. Add the water and cook another ten minutes over low heat.

In a small bowl, mix together the egg yolks, lemon juice, and sherry. Scoop a few spoonfuls of the meat mixture into the bowl of egg mixture. Turn the contents of the bowl into the skillet. Heat gently while stirring. Serve immediately.

Do you think ground turkey could be used in the place of hamburger meat in most of the recipes? I use alot of ground turkey since I had open heart surgery. It is so much better for me.

I shouldn't think it would matter. The taste would be different, and you'd probably need to change any beef stock to chicken stock, but that should be alright.

So this is just a burger but I tried it and it is delish!

Use ground sirlion, just a little over 1 pound. Mix in one small onion (chopped and sauted until soft), grill seasoning and a T of worcheshire. Grill. Then saute some sliced portabello mushrooms with EVOO, salt and pepper. Melt swiss cheese on top of burger. Top with the mushrooms. Then top with fresh spinach and pepper. Slather on mayo mixed with balsamic venegar and pepper. Toast onions buns.

Very yummy!

This is the meatloaf recipe I use; before I tried this I never liked meatloaf

1 1/2 pounds lean ground beef
1/2 cup crushed buttery round crackers
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.
Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, 45 to 60 minutes.
