I had a huge Korean lunch today. I went out with friends. The spicey food warmed me to the core and filled me up too much for dinner.

We are having tilapia with something tonight. Hubby cooks on Mondays. Dinners on Mon and Wed are always a surprise.

Turkey meatloaf I made yesterday, along with fingerling potatoes and salad. The meatloaf is so simple:

2 lbs. ground turkey
1 small - medium chopped onion (or more if you like onion)
2 ribs celery, diced (or more if you like celery)
2 eggs
1 box Stove Top stuffing mix with the seasoning packet

Mix all together, shape into loaf, bake at 350 F for 45 minutes or until done (45 minutes to 1 hour).

You can adjust this recipe for more veg -- grated carrots, chopped spinach, etc. I sauteed the onions & celery in a couple capfuls of vegetable oil just until soft and barely turning color.

To the beaten eggs, I added a healthy squeeze of French's mustard and a scant 1/8 cup of milk (I eye-balled the mustard & milk additions).

Instead of the Stove Top stuffing mix, I added Progresso brand Panko Italian seasoning bread crumbs.

It turned out very good. Happy cooking!

Julie1955, your turkey meatloaf sounds delicious. I really like the idea of adding stovetop stuffing to the mix. YUM!

We're having turkey breast, sweet potatoes and green beans.

That sounds great! I'm going to add it to our menu for next week.

Tonight is chicken and Spanish rice w/ veggies.

Teriyaki Meatballs with Cabbage

1 1/2 lbs diet lean ground beef
2 eggs
breadcrumbs
flour
1 bag of coleslaw mix
16 oz can beef broth
¼ cup soy sauce
2 tsp sesame oil
¼ tsp ginger
1 Tbsp minced garlic

Mix ground beef with eggs. Add some breadcrumbs and flour to hold it together. Make small meatballs and arrange them in a 9x13 casserole dish. Pour bag of coleslaw over the meatballs.

Mix broth with soy sauce, sesame oil, ginger and garlic. Pour mixture over beef and cabbage. Cover with foil. Bake at 350 for 45 minutes. Remove cover, bake 15 minutes longer.

Last night I skipped the sesame oil, ginger, garlic and soy sauce, but used a bottle of teriyaki sauce and the beef broth. It turned out fine.

I have never made mac and cheese with chicken. I have tried it with tuna, which is pretty good. Do you use leftover chicken or the stuff in the can?

On Wednesday's I have bible study, so we always have sandwhiches. Tonight is BLT's with cheese and avocado. Super Yummy :)
