We went out last night for dinner . I had a glazed pork tenderloin, garlic mashed potatoes, and green beans. Oh, plus a glass of red wine.

Tonight I have beef ribs on the menu but not sure what else we'll have.

We are living off of soups right now. I love soup at this time of year. Last night I made a huge pot of beef stew for company, then my brother called out of the blue and said he was coming to dinner and should he bring pizza. lol I could not imagine a pizza box in the middle of my table with company over, so I told him absolutely not! Please just come eat; which he and his little family did. I was so glad I had plenty. There was even enough stew left over for lunch today, but the pumpkin bread was completely devoured.

Tonight we had homemade chicken with rice soup. Tomorrow we will have chicken and dumplings. The chicken and vegetables are in the pot and ready to be cooked tomorrow. I just have to add noddles and dumplings. I boned both chickens and cut up the vegetables at the same time this afternoon, so I could be prepared early for dinner tomorrow. I feel so accomplished.

Date night at home with my hubby ~ the kids went to Denny's on their weekly date with Mamaw. (Tuesday night is "kids eat free night" there)

Tonight we're grilling sirloin burgers. I have potatoes baking. And we'll have green beans.

It's Bible study night (meets at our home) so we always do easy.

breaded walleye, sweet potato, beats in pear juice and creamed corn - kind of an odd combination but delicious. I'm glad I have a husband who helps cook

Our administrator brought in a crockpot of meatballs for us since today is Parent Teacher COnference day. I was here doing child care. I ate 3 of those for now and then will eat whatever's served for ladies' Bible study dinner. I hope it's good because I'm STARVED.

I spent 11 of the last 12 hours playing with little kids or taxiing mine around.

I'm starting a new program, but don't really have a recipe in mind for tonight. So I may have:

4 oz shrimp
A special, spicy dipping sauce for the shrimp
Chickpeas
Small fruit salad for dessert

I made a yummy rice casserole tonight. We get TONS of brown rice on WIC and we have not been big rice eaters before this, so I have had trouble finding things my family will eat.

Tonight's recipe...
2 packets instant brown rice (cook as directed)
1 lb hamburger
1 onion
1 can cream of mushroom soup
1 can mushrooms
1 can creamed corn
1/2 cup milk
1/4 lb Velveeta

Cook hamburger and onion, drain. Add rest of ingredients and stir until cheese melts. Add to cooked rice. Bake for 30 minutes at 350.

I'll have to double it next time. There were no leftovers.

Tonight I made a dinner for a friend who had surgery. So I made the same for us. It's a recipe my aunt called Good Luck Hotdish. It's made with italian sausage, onion, garlic, chili powder, pepper, black eye peas, and tomatoes. Ours is simmering on the stove now. I also have a fruit salad made. May do a salad or green veggie.

I love soup at this time of year as well. Soup is also handy because we're on a really tight budget until my unemployment starts up again.

I made this one today:

A whole bag of pinto beans soaked overnight and then simmered in chicken broth til tender. Once the beans were nearly done I added about a pound of uncooked ground turkey and simmered it for about 30 minutes, until the turkey was cooked. I added a small can of diced green chiles, a package of taco seasoning, a bag of frozen sliced yellow squash and a bag of frozen fire roasted red, green and yellow bell peppers and onions that were cut into strips. I seasoned it to taste with salt and pepper. If you'd like it spicier add some red pepper flakes or hot sauce.

It's really good :) It has a very small burn. I plan to make some cornbread to go along with it.

We had this baked teriyaki chicken made with chicken legs, with brown rice (cooked with onion soup mix to add flavor), salad, homemade rolls, and a raspberry crumble for dessert.

Storms from Hungry Jacks. X and I went to a movie together this afternoon and we had McDonalds beforehand. Neither of us were very hungry so we decided to just have an icecream on the way home.

I'm 99.9% sure we're having California burritos. It's getting late but I'm waiting for DH to get off work so we can decide. Thank goodness for open 24 hours a day restaurants.
