We are trying basa swai fish. It was on sale at the grocery store, so I bought some without having ever heard of it. Hopefully it will be good. I'm making a breadcrumb stuffing with onion, garlic, green pepper, mushrooms and cheese. I will cook some butternut squash and either noodles or potatoes.

I made an eggplant tomato gratin (needed to use up our eggplants) and we'll also have stuffed acorn squash.

Hope you feel better soon, sunshine4God.

My guys had chicken schnitzels on buns and I had a Morninstar grilled "chicken" patty on an Arnold sandwich thin. We also had German potato salad and green beans.

Tonight I broiled salmon and then we ate up the leftover eggplant tomato gratin. And I had a mini snickers for dessert.

Grilled chicken (probably the last of the season - it's getting too dark to grill) with stuffing, and I experimented and made some Butternut Squash Fries which didn't turn out very crispy.

Spaghetti with brown rice noodles.
I am trying all sorts of whole grain noodles. My family is so particular about noodles! So far brown rice seems to be something they will all eat without complaining.
Last night I tried corn noodles. They were quite good, but not a big hit with the rest of the family. I think I'll use them in soup in see how that goes.

Since we're having major plumbing problems (pipe going from kitchen sink, under house, to drain has holes from tree roots) , we are keeping it super-simple tonight. The less dishes the better, as I'm washing the dishes in a plastic tub that fits into the sink, then throwing the water out back. ANYWAY, probably going to have sandwiches or ham & cheese roll-ups for supper.

Yum! I pulled out my butternut squash to put in the oven tonight, maybe I'll have to try this.

I've got a big pot of vegetable soup on the stove. It smells delicious!!!

I ordered ten pounds of acorn squash from a supplier I purchase groceries from once a month. I meant to order butternut squash, but somehow was in too much of a hurry or something. I think I did the exact same thing last year. Acorn squash is good, but a pain in the neck to deal with because of all the ridges. I don't have time to deal with peeling it, so I cut it in half and bake it or cook it in water in a pan with the lid on it. Since we've got lots, that is what we are having for dinner and something to do with a whole chicken.

We had a beef roast, potatoes, carrots, and onions. They've been in the crockpot alllllll day, and I made biscuits to go with it.

I made Gypsy Soup which is a Spanish style vegetable soup. Then made pizzas with pesto, kalamata olives and mozzarella cheese.
