Baked chiles rellenos casserole, refried black beans, and salad. (Think DH will notice there's no meat? )

Yeah, I agree. lol

We are having something with chicken breast, but I'm not sure what. I think I'll marinate it, then bake it. Broccoli. Still thinking, maybe steamed potatoes.

Chiles rellenos - DROOL!!

Ya can't get poblano peppers in the grocery stores here. I've looked.

(I did have some TVP chili and a plate of cooked cabbage for supper. Exciting stuff, LOL!)

I roasted a chicken last night so tonight we had Roasted chicken soup with wild rice & mushrooms.

I ended up marinating the chicken breast in sesame ginger dressing, then baking it. I cooked some whole wheat udon noodles and steamed spinach. When the chicken was done, I cut it up and tossed it with the noodles and spinach, then added some more sauce. It turned out well.

Tonight is the lab Christmas party. Prime rib, shrimp, and lots of other good stuff. Joe will get leftover turkey noodle soup and my dessert from the party if they'll let me take it home.

Cynthia, that sesame/chicken/noodle dinner sounds good. I'll have to make that. I have some sesame ginger marinade in the fridge.

Last night was soup/sandwich night at church, so I made potato soup. Tonight hubby has requested sirloin steak, potatoes and salad (with cheese and bacon bits).

I'm thinking some kind of breakfast food. Lately the only meat I really want to eat is chicken/turkey and my kids are sick of that. Plus my kitchen is a mess because I made cookies on Tuesday afternoon and evening but haven't really been home long enough to clean it up.

Tomorrow there is an open house at the school that I have to be at and they are having soup and salad to eat.

I've got 1 chicken breast, lots of zucchini, spinach & roma tomatoes....so I'm going to sauteed it all up and have it on Healthy Choice thin spaghetti. I think.
