Chicken & rice in the crock pot. I've not done it in the crock pot before (although when I was single, my family had done pork chops & rice in the crock), but tonight's schedule is such that I'll be gone during the afternoon and back home in time for dinner. So, into the crock pot it goes!

Last night I stuffed chicken breasts with diced green chiles, garlic and jack cheese, breaded them and baked them. Served with noodles and salad.

Dinner at church, my turn to prepare this week . . . . thankfully we had a lot of hamburgers and hot dogs left over from a gospel singing at the church Saturday night, so I just have to pull it out of the freezer and warm it up!

I found them at Publix. I have trouble finding them because they have tortillas all over the store (deli, ethnic aisle, bread aisle, end of aisles, and with the cheeses) and I never can remember where the whole wheat ones live!!!

So, I changed to beef tacos. I had chicken for lunch and last night for dinner, so I am marinating a 1 lb beef roast in red wine vinegar and salsa. It will make a good lunch leftover!

Lets see I have missed a few nights.

We had burgers and tater tots, then steak and gravy over noodles with corn, pot roast mashed potatoes gravy, Wendy's.
Last night was meatloaf au gratin potatoes corn on the cob tonight was burgers and tater tots. Tomorrow night pizza and corn on the cob.

I'm still experimenting with the Weight Watchers Take Home Tonight cookbook. I made Keema Samosas tonight. They're very spicy and wrapping the meat in the won ton wrappers was time consuming, but they sure are yummy. Joe had a friend over and they devoured a whole cookie sheet between them. We'll also have a choice of leftover General Tso's chicken and rice or leftover baked fish. Joe liked the fish, or I would have just thrown it out. It was that disgusting to me. I'm also going to make some more hummus to spread on whole wheat flatbread.

Sandwich Night...my 4 y/o *thinks* he wants sloppy joes. I have no idea where he got that idea, must be tv So we shall see how they go over...french fries and broccoli to round it out.

YUMMY SANDWICHES!!!!! That is my favorite night. That is going to be us tonight, but probably Subway because we just were told yesterday that Kali has to perform at an event tonight. Apparently they were given the opportunity a couple of days ago and the dance studio needed to make a decison before they told the kids and parents.

Grilled chicken and sweet corn. I also made a veggie recipe I found on ww online. It has eggplant, zucchini, peppers, mushrooms, onions, broccoli, cauliflower, and a very unusual sauce with salsa, balsamic vinegar, basil and oregano. Sure hope it's good because it made a whole potful.

Well, DH loved them (he hadn't had them since he was a kid!) but the kid that requested them thought they were "yucky", lol. Great opportunity to remind him that things are rarely like they seem on TV!

Pizza Night tonight! It's also my shopping day...I haven't decided what kind of pizza to have yet...

Here's the recipe. I will sub whole wheat noodles.

We ended up not having it because I got home from church too late and dh needed to eat fast so he could workout w/o getting sick a little later. So, last night I ate leftover roast tacos and dh ate the leftover beef roast w/ corn on the cob and leftover lentils.

Tonight is the Asparagus Lasagna!! I hope dh likes it.
