What kind of veggies are you talking about. There's a pickle called piccalilli here ~ it has cauliflower, courgette and onions in it (that I can think of, although it does vary quite a lot) and is in a mustard and tumeric dressing (not sure that's the right word).

One of my favorite snacks when I was a girl was sliced cukes and sweet onions in vinegar with salt and pepper. In the summertime, my mom would just keep a bowl in the fridge all the time and we could scoop some out.

I've used this one, it's easy, and very good 2 c sugar 1 c vinegar 2 T salt Bring to a boil, stirring often, just until sugar dissolves Remove from heat, add 1 t celery seed, let cool (very important) Pour over 7c thin sliced cucumbers, and thin sliced onions (I use dried onion flakes instead) You can add sliced or chopped bell peppers if you like Keep these covered in the refrigerator. After I've used out of mine, and I start to have more juice than pickles, I've added more fresh sliced cucumbers to what was in the bowl. (My mom puts hers in jars, I just leave them in a big covered bowl) You can do this with halved cherry or grape tomatoes, too.
