If you could ONLY pick one of each, who would you choose for most talented actor and actress in Hollywood?
(Mine are: Leonardo DiCaprio and Jodie Foster)

For actress I'd have to say Meryl Streep. She never ceases to amaze. I always think I'm going to dislike her performances, and then she is totally convincing as whomever she plays.
For actor the choice is a little tougher. Russell Crowe is pretty awesome as an actor. He's the first one who comes to mind. I was blown away by seeing him in The Insider and then seeing him in Gladiator. Didn't even seem it was the same person at all. Amazing.

Russell Crowe is good. I agree that he can completely morph into a role and be unrecognizable. Gladiator, Cinderella Man, A Beautiful Mind, and Insider showed his awesome range and depth of skill.
I think Heath Ledger is another one like that...His Joker from The Dark Knight was just amazing!

I concur with Meryl Streep. I have not ever been disappointed with her acting... don't love all of her movies but she's always incredible.
It's harder to come up with one for men.
Tom Hanks is another that I think is excellent in most movies, again not liking all his movies and of course forgetting several of his early roles. (Bachelor Party etc.)
Of the younger set:
Female: Reese Witherspoon
Male: Will Smith

I couldn't begin to pick just two, but those are both good choices.

For actor, I would probably choose Gary Oldman (or is it Oldham?). I can't think of another one who has played such diverse roles, and who is so not-recognizable from one to the other.

Gary Oldham is so underrated. JFK, Dracula and Sid and Nancy come to mind. But my favorite Oldham film is Immortal Beloved. That's just one of my favorite movies period.
Sean Penn and Tim Robbins are also great actors. I heartily disagree with their politics, but the dudes can act.

Right now I would have to say James Mcavoy. I've only seen him in Narnia, Atonement, Becoming Jane and parts of Last King of Scotland and bits of Mcbeth but he's really really good especially in Becoming Jane. I know, total chick flick.
female is harder...right off the bat guess I'd say Jodie Foster

For actor I have to say its a tie between Christian Bale and Morgan Freeman. Christian Bale is one of those types who takes a role and completely makes it his own. He is also very versatile. Morgan Freeman is just incredible, pulls off many surprises in the movies he's in.
Actress, this one is tough. It wouldn't be anyone modern because it isn't about talent. I would have to Meryl Streep, the lady is beyond description.

-James McAvoy and Johnny Depp are both brilliant actors. They are so talented and versatile... they actually make you believe the story your watching is real...
-Cate Blanchett and Kate Winslet are again, both amazing actresses. They are incredibly talented and neither of them are the classically beautiful ideal. They choose intelligent, challenging roles and exceed above and beyond expectations.
And to the poster above, a lot of modern actresses have amazing amounts of talent- it's not all about looks.

Hmm, Morgan Freeman is fantastic, but I don't feel he has had his range necessarily tested.
He always seems to play the benevolent, good-hearted, and wise old man type. He feels like the same character over and over a lot of times.
The only time I recall him being evil was in "Wanted." But I thought that movie was terrible and his character not well done. I'm nto saying he couldn't show good range, but that he hasn't been tested.
....
That leads me to the point that I think the most talented actors and actresses should have good skills that enable them to morph into a character so naturally that they are unrecognizable as themselves, but instead as the character. But even better than that is to do and prove it many times and across a broad range of characters (good, evil, middle of the road, funny, serious, intelligent, etc.)...
Using that definition, I think Morgan Freeman has been around quite a lot and played in various types of movies, but his characters themselves seem to be mostly the same within those different movies. And even within those movies, he sometimes seems to just be Morgan Freeman or the same guy from other movies...I don't see him as having his ranged tested, nor having to try wildly different and/or difficult roles outisde of what he has always done/been - the kind-hearted, wise, benevolent old guy. I would love to see him play, for example, a borderline good/bad character who has to confront serious moral dilemmas and has a bunch of intense scenes.....Hmmmm...I guess he did that in "Seven." ...Ok, he's good. But just more recently it seems like he's over-used in movies and mostly in the same or highly similar capacity, so that I can no longer distinguish him between a current role and that of another....   
People who I think fit my super criteria would be:
#1: Russell Crow (Gladiator, A Beautiful Mind, Cinderella Man, The Insider, 3:10 to Yuma)
-----Awesome range...from uber man's man to nerdy, crazy professor to emotionally sensitive and warm-hearted boxer down-on-his-luck, to border-line businessman, to evil, cunning, yet likeable/funny town bully/villain. 
Leonardo DiCaprio (Titanic, The Aviator, Blood Diamond, The Departed, Catch Me If You Can, The Beach)
-----His films always seem epic to me, but nevertheless awesome characters you become immersed in. 
Heath Ledger (The Dark Knight, Brokeback Mountain, Casanova, A Knight's Tale, The Patriot)
-----Doesn't his Joker performance automatically make him one of most talented? 
.......For women, I've always respected Jodie Foster, Scarleet Johansson, Thora Birch, Charlize Theron, Julia Roberts,.....I'm not familiar with Meryl Streep that others mentioned, but now I'm curious enough to check out her work. 
(One very underrated element of acting that is often overlooked is that of comedy...it really is a hard to do it well ...and I'm not a good judge of it so my ratings probably give more weight to serious type actors.  ....also I'm not that familiar with the older generation of actors - like guys over 45.)

Jodie Foster of course, but for the male I'd pick Gene Hackman (and yes I know it's an odd choice)...

Denzel is awesome. Al Pacino and Deniro good too, but Pacino seems to be in too many of those cop/mafia/FBI/CIA type of roles. Not enough ranges as the guys I mentoined above.

what -- no shouts for seymour philip hoffman? de niro, hoffman and pacino are overrated (tell me which of their movie roles of the last 10-15 years was worth 2 hours of my time), and freeman is pretty much a plug-in character actor. i'm a big fan of hanks - he had a geat run in the 90s, but what has he done lately? i like the hackman suggestion, but then, what about michael caine? not quite as much of a ham, and just as much range. crowe is pretty consistently good. di caprio has got some chops as well -- i'm still freaked out by his performance in what's eating gilbert grape? wow. depp, pitt, gosling and mcavoy (i think he was better than whitaker, who i also think is hugely over-rated) continue to grow and interest me as they develop their craft. and how could we forget daniel day-lewis?
i'd have to echo the blanchett and the winslet as immensely talented actresses - and i have always loved emma thompson as well. it'll be interesting to see how the roberts handles the fact that she can no longer play the ingenue and where she takes her acting career (if, indeed, she continues acting at all).
and i know it's not on the table, but what about brangelina as the most talented unit in hollywood (that would be brad pitt and angelina jolie for those living in a cave)?

While I love James McAvoy it is not possible to say that he is over rated. Especially not in Last King of Scotland. I actually forgot at times that this was just a movie and Idi Amin wasn't on screen. He inhabited the character completly and was so believable... and half the people in the world have no idea who he is.
And Angelina Jolie? I haven't seen one movie with her in it that should be critically acclaimed. Admittedly, I haven't seen a Mighty Heart so I can't say that which a lot of authority but please- Mr and Mrs Smith? Tomb Raider? All utter ****. But oooh yes, Emma Thompson is awesome too!
