At our church today we thought about the Lord Jesus Christ as the Lamb of God. Believers are 'redeemed...with the precious blood of Christ, as of a lamb without blemish and without spot' (1 Peter 1). 'Worthy is the lamb that was slain to receive power, and riches, and wisdom, and strength, and honour, and glory, and blessing' (Revelation 5).

Exactly. The theme is inexhaustible. There are so many avenues of Scriptural meditation around "This do in remembrance of me", the Lamb of God being one of them.

The Lamb of God He was the simple Lamb. No schemes or plans for Himself. Exists in helplessness & simplicity. No strength or wisdom of His own. He was the shorn Lamb. Willing to be shorn of His rights, reputation and every human liberty. He was the silent Lamb. Answered nothing. Did not defend or explain Himself. He was the spotless Lamb. Nothing in His heart (or from His lips) but LOVE. No resentment, grudges, bitterness. From Roy Hession's, The Calvary Road

He was also as the sheep, dumb before its shearers, who opened not his mouth (Isaiah 53).

Here is a hymn that is often sung as part of the liturgy (at least in Lutheran churches): This is the feast of victory for our God. Alleluia. Worthy is Christ, the Lamb who was slain, whose blood set us free to be people of God. Power and riches and wisdom and strength, and honor and blessing and glory are His. This is the feast of victory for our God. Alleluia. Sing with all the people of God and join in the hymn of all creation: Blessing and honor and glory and might be to God and the Lamb forever. Amen. This is the feast of victory for our God, for the Lamb who was slain has begun His reign. Alleluia. Alleluia. This prayer is commonly said (or sung or chantd) before communion in liturgical churches: Lamb of God, you take away the sin of the world; have mercy on us. Lamb of God, you take away the sin of the world; have mercy on us. Lamb of God, you take away the sin of the world; grant us peace. A lot of people don't like liturgical worship because of a lack of variety in parts of the worship service from week to week, but an advantage is that certain elements of doctrine, such as Jesus being the Lamb of God, whose body was broken and blood was shed for the redemption of sinners, get embedded in your mind, and you get the idea that these are really important concepts that are worth considering on a regular basis.
