I was given a large pumpkin last night. I have heard that in can be cooked and served as a vegtable. I have no idea of how to do this, but I know with all of the good cooks here, someone can tell me what to do with it.

Here's what I do:

Stick it in the oven to get it soft enough to cut up. I think I do about 425 or so.

Cut it up and roast like any vegetable, puree into soup or a dip...it's pretty versatile.

It's good with butter and brown sugar, the same as sweet potatoes or candied carrots.

I probably don't need to say this, but you know you can salt and roast the seeds too for a tasty snack.

Spice the seeds with cayenne, curry, salt and pepper, garlic, etc. I usually do that, and put them on salads.

It is also good with sausage. Mmmmm....

Peel it, chunk it, and saute it with sausage and onion and garlic and a pinch of red pepper, add a little chicken broth and simmer until it's soft. Oh man, that was good!

It also makes a fantastic curry soup. Just cut out part of the top and scoop out the seeds and etc (like you were carving a jack o lantern) and put it in a 350 oven for an hour or so. Then take it out and scrape around the sides so the yummy pumpkin is loose at the bottom. Careful not to scrape too deep because you want to use the pumpkin itself as the bowl. Add equal parts chicken broth and milk (or cream if you're really smart) plus curry powder and other spices to taste. Is also good with some black beans and/or shredded chicken if you want it to be a main dish.

Seed it. Cut it in half. Place face down in a roasting pan with an inch of water. Bake until a fork easily goes through the skin. Peel off the skin and mash the meat of the pumpkin to use like squash. It's great for pumpkin bread or just add butter, salt and pepper to eat as a side dish.

Coconut milk, not broth, in my version.

I've also seen a dessert version. The pumpkin is used as the cooking bowl and the inside is filled with eggs to make custard.When you serve it you scrap out pumpkin to go with the custard.

If anyone is interested, I know where the recipe is and I'll type it out for you.
